Slowly And Surely Learning To Cook More


Simple Crab Cake Recipe:

1 can Trader Joes refrigerated crabmeat (about 1 lb)
1/3 cup crushed crackers (recommend Ritz crackers)
1 egg
1/2 cup bell pepper finely chopped (this is optional - still very yummy without it)
1/2 cup finely chopped onion
2 tablespoons mayonaise 
2 tablespoons mustard 
Salt and Pepper

Lemon juice (optional)
Chopped Garlic (optional)






In a large bowl, mix together all the ingredients.  Then shape the mixture into patties.  Heat a large skillet with olive oil over medium heat.  When oil is hot, carefully place cab cakes in the pan and fry until brown (about 6 minutes on each side).  Note: sometimes the crab cakes fall apart - adding more egg yolk will really help them stick together.  Enjoy!
